On another fan site (theforce.net) I saw a rumor floating around that in a deleted scene it was implied that Dooku and Jocasta Nu had been romanticly involved. This would be interesting, as she might have deleted Kamino from the database, which would have redeemed her character in the film, otherwise, she was just an offensive stereotype about librarians. Is there any truth to this rumor?

No.
I read the novel and there was a scene where she and Obi-Wan talk about Dooku, there was nothing implied whatsoever.

And Labyrinth of Evil confirms that Count Dooku did indeed erase Kamino from the Jedi Archives, not Jocasta Nu.

In the full scene of Obi-Wan in the archives he stands looking at Dooku's bust when Jocasta Nu comes over to him. She says: "He has a powerful face, doesn't he? He was one of the most brilliant Jedi I have had the privilege of knowing." So she admired and respected Dooku but apparently nothing more.

It has already been confirmed that Dooku erased Kamino, but that would be interesting none the less because at one point in time a lot of important Jedi have had romantic feeling for another Jedi (Qui-Gon and Tahl, Obi-Wan and that one chick in Jedi Apprentice, Kit and Aayla, Luke and Mara, etc).
